   Happy Diwali   

Ingredients:
  • Fresh grated coconut - 2 cup
  • Corn Flour - 2 Tablespoon
  • Sugar - 6 Tablespoon
  • Egg white - 1 large
  • Vanilla Extract - ½ Teaspoon
  • Finely chopped candied red cherries - ¼ cup
  • Decorating nonpareils as required
  • Red and green sanding sugar as required
Instructions:
  1. Preheat oven to 350°F; Line baking sheets with parchment paper.
  2. In a bowl, add in the grated coconut, corn flour, sugar, egg white, vanilla extract, chopped red cherries and mix well.
  3. Divide the dough into 15 equal sized balls and place each ball in the baking sheet.
  4. Slightly flatten each ball and make a hole in the center of the cookie.
  5. Sprinkle the nonpareils, red and green sanding sugar on top.
  6. Bake for about 22-25 minutes or until the coconut begins to brown.
  7. Remove from oven, let it cool in the pan for about 5 minutes.
  8. Then transfer to a wire rack and cool completely.
  9. Enjoy the coconut wreath macaroons.
