   Happy Diwali   

Ingredients:
  • Chopped Cluster Beans - 3 cup
  • Red Pearl Onions - 4-6 Nos, chopped
  • Mustard seeds - ½ Teaspoon
  • Curry leaves - 1 sprig
  • Coconut Oil - 1 Tablespoon

For Coconut masala:

  • Fresh grated coconut - ¼ cup
  • Turmeric powder- ¼ Teaspoon
  • Red Chilli powder- ⅛ Teaspoon
  • Garlic - 2 cloves
  • Cumin seeds - ½ Teaspoon
  • Red Pearl Onion - 1 Nos
  • Roasted gram, Pottu kadala - 1 Tablespoon
  • Salt to taste
Instructions:

Initial Preparation:

  1. Cut both the ends of cluster beans. Wash well and chop them into ½ inch pieces. Set aside.
  2. Place the chopped beans on a steamer. Steam cook until soft and cooked well. Remove from heat and set aside.
  3. Coarsly grind together the ingredients mentioned in 'For Coconut masala' and set aside.

Cluster Beans Stir Fry Preparation:

  1. Heat 1 tablespoon of oil in a pan, splutter mustard seeds.
  2. Add in the chopped pearl onions and curry leaves saute until the onions become translucent.
  3. Now add in the cooked cluster beans, prepared coconut masala and mix well.
  4. Bring everything to the center of the pan and pat down the mixture tightly using the back of a spoon.
  5. Cover and cook for 3-4 minutes on very low heat. Stir occasionally to make sure that the bottom is not getting burned. Adjust salt, if required.
  6. Remove from heat, and let it sit for about 5 minutes. Serve hot with rice.
