Kerala style Seared Mutton Curry

   Happy Diwali   

Ingredients:
  • Mutton - 1 Kg, cut into medium pieces
  • Coconut oil - 3-4 Tablespoon

For Marination :

  • Pepper Powder - 1 Teaspoon
  • Salt - 1 Teaspoon

Whole Spices used:

  • Green Cardamom - 4 Nos
  • Cloves - 4 Nos
  • Black Cardamom - 1 Nos
  • Mace - 1 Nos
  • Cinnamon - 2 small pieces
  • Bay Leaves - 2 Nos

For Mutton Masala:

  • Onion, medium sized - 3 Nos( 500 Gms ), thinly sliced
  • Tomato, large sized - 2 Nos( 200 Gms ), finely chopped
  • Finely chopped Garlic - ½ cup, 30 Gms
  • Finely chopped Ginger - ¼ cup, 15 Gms
  • Green chilies - 2-3 Nos, sliced
  • Red chili powder - 1 ½ Tablespoon
  • Turmeric Powder - ¾ Teaspoon
  • Coriander powder - 3 Tablespoon
  • Garam masala - 1 Teaspoon
  • Fenugreek Powder - ¼ Teaspoon
  • Curry leaves - 2 sprig
  • Water - 2 ½ cup
  • Coconut oil - 3-4 Tablespoon
  • Salt to taste
Instructions:

Initial Preparation:

  1. Clean and wash the mutton pieces. Drain the water completely.
  2. Marinate mutton pieces with the ingredients mentioned under 'For marination' and set aside for 15-20 minutes.

Mutton Masala Preparation:

  1. Heat 3-4 tablespoon of coconut oil in a heavy bottomed deep pan.
  2. Add in the whole spices and fry for few seconds on medium heat.
  3. Add in the marinated mutton pieces and sear until the water content evaporates completely and the meat is completely browned on low-medium heat.
  4. Transfer to a bowl and set aside.
  5. Add the sliced onions into the same pan and saute until slightly browned.
  6. Add in the chopped ginger, garlic, green chilies, curry leaves and saute until the raw smell disappears.
  7. Add chopped tomatoes and saute for 3-4 minutes or till the tomatoes are mashed well.
  8. Then add in the turmeric powder and fry for 1 minute on low heat.
  9. Then add in the coriander powder and fry for 1-2 minutes on low heat.
  10. Then add in the red chilly powder, garam masala, fenugreek powder and saute for 1-2 minutes, or until the raw smell goes on low heat.
  11. Add ½ cup of water and mix well, cook until the water content evaporates completely on medium heat. Stir continuously.
  12. Add in the mutton pieces and combine well.
  13. Then add 2 - 2 ½ cup of water, enough salt and mix well.
  14. Cover and cook for about 80-90 minutes or until the mutton is cooked well and the curry is thick on low-medium heat. Stir occasionally.
  15. Remove from heat and serve warm.

Tips:

  • If you are using pressure cooker to cook the mutton,
    • Add 1 - 1 ½ cup water, enough salt and mix well. Cook until 3-4 whistles. After 3-4 whistles, put it on low flame for about 15 to 20 minutes or till the mutton is nicely cooked. Remove from heat.
    • Once the pressure is settled down, open the cooker. If the gravy is not thick, place the opened cooker on a medium flame till the gravy is thick. Stir occasionally.
