Cardamom Ghee Cake, Elaichi Ghee Cake
Ingredients:
  • All-purpose Flour - 1 cup
  • Ghee, Clarified Butter - ½ cup, texture should be solid
  • Cardamom powder - 1 to 1 ½ Teaspoon, adjust according to your taste
  • Sugar - 1 cup
  • Egg - 2 Nos, at room temperature
  • Milk - ¼ cup, at room temperature
  • Baking Powder - ½ Teaspoon
  • Baking Soda - ¼ Teaspoon
  • a pinch of Salt
Instructions:
  1. Pre-heat oven to 350°F.
  2. Grease a 9X5 inch loaf pan and line it with parchment paper, set aside.
  3. In a bowl, sift together the all-purpose flour, baking powder, baking soda and salt for 2-3 times.
  4. Take ghee and sugar in a large mixing bowl. Beat until creamy, for about 3-4 minutes on medium speed.
  5. Then add in the eggs and beat well until creamy and fluffy, for about 2-3 minutes on medium speed.
  6. Now add in the flour mixture and milk alternatively as batches.
  7. Beat on low speed until just incorporated after each addition. Don't over-mix.
  8. Add in the cardamom powder and mix well.
  9. Don't forget to scrape down the sides of the bowl occasionally.
  10. Pour the batter into the prepared pan and level the top.
  11. Tap the pan several times to release the air bubbles.
  12. Place the pan onto the middle rack of oven and bake for 40-50 minutes or until a wooden skewer inserted comes out clean.
  13. Remove from oven, transfer the cake to a wire rack, and let it cool completely.
  14. Once cooled, cut it into pieces and enjoy.

Notes:

  • Ghee should be in solid form. Please avoid semi-solid or liquid textured ghee.
