Bakery style Dilkush, Dilpasand recipe
Ingredients:

For Dough:

  • All-purpose flour - 2 cup
  • Active Dry Yeast - 2 Teaspoon
  • Lukewarm Milk - ½ cup
  • Sugar - 2 Tablespoon
  • Melted Butter or Clarified butter(ghee) or Vegetable Oil- 2 Tablespoon
  • Salt - ¼ Teaspoon
  • Lukewarm water to knead, as required ( 2-3 tablespoons approx: )

For Filling:

  • Grated Coconut - 1 cup
  • Tutti Frutti - ¼ cup
  • Glazed cherries, chopped - 2 Tablespoon
  • Raisins - 15-20 Nos
  • Broken Cashew nuts - ¼ cup
  • Sugar - ¼ cup
  • Brown Sugar - 2 Tablespoon
  • Butter or Ghee - 1 Tablespoon, optional

Other Ingredients:

  • All-purpose flour, for dusting
  • Egg white or milk, for brushing before baking
  • Butter, for brushing after baking
Instructions:

Initial Preparation & Dough Making:

  1. Take the lukewarm milk in a bowl, add in the yeast and sugar. Mix well.
  2. Keep aside until frothy for about 10-15 minutes.
  3. In a large mixing bowl, add in the flour, salt and mix well.
  4. Then add in 2 tablespoon of butter or ghee, yeast mixture and mix well.
  5. Knead until the dough is smooth and elastic, about 6-10 minutes. Add lukewarm water little by little, if required. Shape dough into a ball shape.
  6. Cover the bowl with a plastic wrap or a towel and let the dough rise at room temperature until doubled, about 1-2 hours.

Filling Preparation:

  1. In a bowl, add the ingredients mentioned in 'For Filling', mix well and set aside.

Arrangement & Baking:

  1. Knead the dough for a minute.
  2. Divide the dough into two equal portions, and shape them into balls.
  3. Lightly dust the work surface with flour, roll each dough ball into slightly thick rounds.
  4. Place one rolled dough into a baking sheet.
  5. Spread the prepared filling onto the rolled dough uniformly by leaving the sides.
  6. Brush the sides with water, place the second rolled dough on top.
  7. Gently press the sides to seal the edges properly.
  8. Keep it aside in warm place for 30 minutes.
  9. Then brush the top with egg white or milk.
  10. Place the pan in a 350°F preheated oven and bake for 25-30 minutes.
  11. Remove immediately from pan and let it cool for at least 10 minutes.
  12. Then slice, serve and enjoy :)

Tips:

  • Once the dilkush is ready, remove it from oven, immediately brush some butter on top of the bread, to get a soft and shiny crust.
