Grapes – Banana Jam

   Happy Diwali   

Ingredients:
  • Baby Banana, Palayamkodan - 1 ½ Kg
  • Grapes - 500 Gms, cleaned and washed
  • Cloves - 8-10 Nos
  • Cinnamon - 3 inch piece
  • Sugar - 500 Gms
  • Water as required
Instructions:

Cooking banana:

  1. Peel the banana skin and cut into small slices.
  2. In a sauce pan, add in the banana slices, cloves, cinnamon and enough water. Water level should be just above the mixture. Mix well and cook until the banana slices are cooked well. Remove from heat and let it cool.
  3. When it is cooled, mash well the cooked banana mixture using a muddler and pour into a clean muslin or cheese cloth kept over a bowl.
  4. Squeeze well the banana pulp and collect all the juice and discard the residue.
  5. Transfer the banana juice into a large bowl.

Cooking Grapes:

  1. In a sauce pan, add in the cleaned grapes and enough water. Water level should be just above the mixture. Mash the grapes using a muddler and cook until the grapes are cooked well. Remove from heat and let it cool.
  2. When it is cooled, pour the whole cooked grapes mixture into a clean muslin or cheese cloth kept over a bowl.
  3. Squeeze well the grapes pulp and collect all the juice and discard the residue.
  4. Add in the grapes juice into the banana juice and mix well.

Jam Preparation:

  1. In a heavy bottomed deep wide pan, add in the banana-grapes mixture, sugar and mix well.
  2. Cook until the mixture begins to get thick on medium heat by stirring periodically.
  3. Once the jam begins to thick, lower the heat and stir continuously until the mixture turns to jam consistency.
  4. Remove from heat and let it cool slightly. Transfer to a glass jar and use as needed.

Tips :

  • To know the consistency of the jam, pour a drop of jam into a steel plate/glass.If it forms into a small pearl without any spreading, then its time to switch off the stove.
