Vegetable Cutlet

   Happy Diwali   

Ingredients:

For Filling:

  • Potatoes - 3 Nos, small sized
  • Chopped mixed vegetable - 1 cup(I used carrot, beans and beetroot)
  • Finely chopped Onion - ½ cup
  • Finely chopped Green chilly - 1 Teaspoon
  • Finely chopped Ginger - ½ Teaspoon
  • Finely chopped Garlic - 1 Teaspoon
  • Kashmiri Chilli powder - 1 Teaspoon
  • Coriander Powder - 1 Teaspoon
  • Turmeric powder - ¼ Teaspoon
  • Black Pepper Powder - ½ Teaspoon
  • Garam Masala - ½ Teaspoon
  • Lemon Juice - 1 Teaspoon
  • Cumin seeds - ½ Teaspoon
  • Chopped coriander leaves - ½ Teaspoon
  • Oil as required
  • Salt as required

For coating:

  • Breadcrumbs as required
  • All purpose flour ~ Maida - 2-3 Tablespoon
  • Water as required
Instructions:
  1. Cook the potatoes, mash it and set aside.
  2. Cook the chopped vegetables till it becomes soft. Then mash the cooked vegetables and set aside.
  3. Heat oil in a pan, add cumin seeds, fry till brown in color.
  4. Add the finely chopped ginger, garlic, green chilly and sauté till the raw smell disappears.
  5. Add the finely chopped onion and sauté till light brown in color.
  6. Then add turmeric powder, coriander powder, chilli powder, pepper powder, garam masala and fry for 2-3 minutes on low flame.
  7. Add the mashed vegetables, and mix well.
  8. Add the mashed potato, lemon juice, coriander leaves and salt, mix them well and sauté for 1-2 minutes. Remove from flame.
  9. Allow the mixture to cool for sometime; Meanwhile prepare a slightly watery flour batter by mixing all-purpose flour with enough water.
  10. Make equal sized balls from the prepared masala. Then slightly flatten the balls.
  11. Dip it into the flour batter, then roll it into the breadcrumbs. Make sure that it is well coated in all the sides.
  12. Heat oil in a heavy bottomed pan, once the oil becomes hot, place the prepared cutlets slowly into the oil as batches depending on the pan size.
  13. Fry in low flame till it become golden brown on both sides; Then keep the fried cutlet in a kitchen towel or tissue, serve hot.

Yield: Makes about 10-12 cutlets
