Ingredients
  • Chicken - 1 Kg, cut into medium sized pieces
  • Finely chopped onion - 2 cup
  • Tomato (large sized) - 1 Nos, finely chopped
  • Yogurt - ½ cup
  • Cinnamon - 1 inch stick
  • Cardamom - 4 pods
  • Cloves - 3 Nos
  • Star anise - 1 Nos
  • Kasuri methi - 1 pinch
  • Chopped coriander leaves - 2 Tablespoon
  • Oil - 2-3 Tablespoon
  • Water - ¼ cup
  • Salt to taste

For ground paste:

  • Ginger - 1 ½ inch piece, chopped
  • Garlic - 3 cloves
  • Kashmiri chilli powder - 2 Tablespoon
  • Turmeric powder - ½ Teaspoon
  • Blanched Almonds - 15 Nos
  • Cashew nuts - 10 Nos
Directions

Initial Preparation:

  1. Clean and wash the chicken pieces; Drain the water completely and set the chicken aside.
  2. Grind together the ingredients mentioned in 'For ground paste' and make a fine paste using little water and set aside.

Badami Chicken Preparation:

  1. Heat oil in a heavy bottomed pan, add the whole spices and fry for few seconds.
  2. Now add the chopped onions and fry till the onion turns translucent and slightly golden on medium heat.
  3. Add the tomatoes and sauté till the tomatoes are mashed well.
  4. Then add the chicken pieces along with ground masala paste and sauté for about 4-5 minutes on a medium heat.
  5. Then add water and mix well; Cover and cook until the gravy has little thickened up on low heat; Don't forget to stir occasionally.
  6. Now add the salt, whisked yogurt, kasuri methi and combine well. Cover the pan and cook till the chicken is done and the gravy become thick.
  7. Remove from heat, garnish with chopped coriander and serve hot.
