Ingredients
  • All purpose flour - 2 cups
  • Grated carrots - 3 cups
  • Granulated white sugar - 1 cup
  • Brown sugar - 1 cup
  • Baking soda - 2 Teaspoon
  • Baking powder - 2 Teaspoon
  • Eggs - 4 Nos
  • Ground cinnamon - 2 Teaspoon
  • Ground Nutmeg - ½ Teaspoon
  • Chopped Nuts(cashewnuts or almonds) - 1 cup
  • Raisins - ½ cup (optional)
  • Vegetable oil - 1 ¼ cup
  • Salt - ½ Teaspoon
  • Vanilla Extract - 2 Teaspoon
Directions
  1. Preheat oven to 325°F. Prepare two 9” pans by lining with wax paper.
  2. In a large bowl, mix together all-purpose-flour, baking soda, baking powder, cinnamon, nutmeg and salt.
  3. In another bowl, add eggs, oil, sugars and vanilla; beat on medium speed for 2 minutes or until fluffy.
  4. Now add the dry flour mix into this and beat for about 2 minutes more.
  5. Then add the grated carrots, nuts and raisins and mix well using a spoon.
  6. Pour batter in prepared cake pans and bake for approx. 45 to 50 minutes.
  7. Cool cake in pan for 5 minutes, then turn out onto a rack.
