   Happy Diwali   

Ingredients:
  • Boneless Chicken – 1 Kg, medium cube sized
  • Vegetable oil to fry

For Marination:

  • Cornflour – 1 Tablespoon
  • Pepper powder - ½ Teaspoon
  • Ginger - Garlic Paste - 1 Teaspoon
  • Salt - ½ Teaspoon
  • Egg - 1 Nos

For Sauce:

  • Cumin Seeds - ½ Teaspoon
  • Chilli powder - ½ Teaspoon
  • Cumin powder - ½ Teaspoon
  • Pepper Powder - ½ Teaspoon
  • Chopped Garlic - 1 Tablespoon
  • Chopped Ginger - 1 Teaspoon
  • Chopped Green Chillies - 1-2 Tablespoon
  • 'Dried Kashmiri red chillies-Ginger-Garlic' paste - See Notes
  • Curry Leaves - 1-2 sprig
  • Chopped Coriander leaves - 1-2 Tablespoon
  • Red Food colour - 2-3 drops, optional
  • Vegetable oil - 1 Tablespoon
  • Water - ¼ cup
  • Salt to taste
Instructions:

Initial Preparation:

  1. Marinate chicken pieces with the ingredients listed in 'For marination' and set aside for 15 minutes.
  2. Heat oil in a frying pan, add in the marinated chicken pieces, fry until lightly golden brown. Transfer to a paper towel.

Chicken-65 Preparation:

  1. Heat 1 tablespoon of oil in a wide pan, add cumin seeds and fry for few seconds.
  2. Add in the chopped ginger, garlic and saute until the raw smell disappears.
  3. Add in the chopped green chillies, 'Dried kashmiri red chillies- Ginger-Garlic paste', curry leaves and saute for 1-2 minutes on low heat.
  4. Add pepper powder, chilli powder, cumin powder, salt, red colour mentioned in 'For Sauce' and saute for 1-2 minutes on low heat.
  5. Add ¼ cup of water and mix well, then add in the fried chicken pieces and combine well. Saute until the water content evaporates completely.
  6. Remove from heat, add in the chopped coriander leaves, give a quick mix, serve hot :)

Notes:

For 'Dried Kashmiri red chillies-Ginger-Garlic' paste:

  1. Grind together 2-3 dried kashmiri red chillies, ½ teaspoon of ginger-garlic paste with 2 tablespoons of water.
