Ingredients
  • Cooked Jasmine rice / Long grain Basmathi Rice - 2 cups
  • Eggs - 2 Nos, whisked
  • Finely diced Carrots - ½ cup
  • Thinly chopped Green beans - ¼ cup
  • Sweet corn - ½ cup
  • Shallots - 2 Nos, finely sliced
  • Garlic - 2 cloves, finely chopped
  • Finely sliced spring onion whites - 1 Tablespoon
  • Lite/white soy Sauce - 1 ½ Tablespoon
  • Dark Soy sauce - 1 Tablespoon
  • Kashmiri Red chilli flakes - 1 Teaspoon
  • Vegetable Oil - ¼ cup
  • Sugar - ½ Teaspoon
  • Finely sliced spring onion greens - 1 Tablespoon
  • Salt to taste
Directions
  1. Heat oil in a large pan over high heat, add the whisked egg; Stir continuously till the egg is slightly golden on edges; Remove and set aside. Leave remaining oil in pan.
  2. In the same pan add shallots, garlic, spring onion whites and cook until translucent.
  3. Add carrot, green beans, sweet corn and sauté for 2-3 minutes until lightly golden.
  4. Now lower the heat, add the cooked rice and fried egg and mix well.
  5. Then add sauces, red chilli flakes, sugar and salt; Toss till well combined.
  6. Garnish with spring onions greens; Serve hot.
