Ingredients
  • Drumsticks leaves - 1 cup
  • Mustard seeds - ½ Teaspoon
  • Coconut Oil - 1-2 Tablespoon
  • Curry leaves - 3-4 leaves
  • Salt to taste
  • Water as required

For coconut paste:

  • Grated Coconut - 2 cup
  • Red Pearl Onions - 3-4 Nos
  • Garlic - 2 cloves
  • Cumin seeds - ¼ Teaspoon
  • A pinch of Turmeric powder
  • Water - ½ - 1 cup
Directions
  1. Clean and wash the drumstick leaves thoroughly and drain the water completely. Set aside.
  2. Grind together the ingredients mentioned under 'For coconut paste' and make a fine paste.
  3. Heat coconut oil in a pan, splutter mustard seeds.
  4. Add in the drumstick leaves, curry leaves and saute until the color of drumstick leaves change to dark green in color on low-medium heat.
  5. Add in the coconut paste, enough water and salt. Simmer and combine well.
  6. Continue stirring until the curry is hot on low heat. Once the curry is hot, switch off the flame. Don't allow the curry to boil.
  7. Serve hot with rice.
