Directions
  1. Hard boil the eggs, remove the shell, make 3-4 small slits on the sides and set aside.
  2. Heat oil in a heavy bottomed pan, add sliced onions, green chillies, curry leaves and saute until the onions become translucent. If you want a dark brown roast, fry until the onion turns golden brown in color.
  3. Now add in the ginger-garlic paste and saute till the raw smell disappears.
  4. Add red chilli powder, coriander powder, pepper powder, salt and combine well. Fry for 1-2 minutes on medium heat.
  5. Then add the chopped tomatoes and saute until the tomatoes are mashed well.
  6. Add ½ cup of hot water and mix well.
  7. Now add the boiled eggs, cover the eggs with the masala. Cover and cook for 5-6 minutes over low heat.
  8. Then add in the garam masala powder and mix well. Cook until the gravy is thick and oil separates, for about 3-4 minutes.
  9. Remove from heat and keep it covered for 5 minutes. Serve warm.
