Ingredients
  • Palakkadan Matta Rice(Red rice) - ¾ cup, you can use any rice of your choice
  • Milk - 4 ½ cups
  • Sugar - 1 - 1 ¼ cup
  • Cashew nuts - 10-15 Nos
  • Raisins - 5-10 Nos
  • Cardamom - ¼ Teaspoon
  • Ghee - 1 ½ Tablespoon
  • Water - 3 cups
Directions
  1. Wash and thoroughly dry the rice.
  2. Heat ghee in a heavy bottomed sauce pan, add cashew nuts and raisins and fry till light golden color; Remove from ghee and set aside.
  3. Then add the rice in the same pan and roast for 2-3 minutes on medium flame or till you get a roasted aroma.
  4. Once roasted, add in the milk and water and cook under medium heat for 10 minutes. Stir occasionally.
  5. Then add sugar, roasted nuts and raisins and cook on low flame till the rice is done or till you get the right consistency. Stir frequently.
  6. Once you get the desired consistency, remove from fire and add cardamom powder; Mix well. Serve hot or warm.
