Ingredients

For Peach-Mint Syrup:

  • Ripe Peaches - 4 medium, pitted and chopped
  • Mint Leaves - 1 cup
  • Fresh Lemon Juice - ½ - ¾ cup, adjust
  • Sugar - 1 - 1 ¼ cup, adjust
  • Water - 1 ¼ cup

For Serving:

  • Chilled water or plain soda - 4 cups, adjust
  • Ice cubes as required
  • Peach slices, Lemon wedges and Mint leaves to garnish
Directions

Peach-Mint Syrup Preparation:

  1. In a saucepan, combine peach pieces, sugar and 1 ¼ cup water, stir well and boil until the sugar is completely dissolved on medium heat.
  2. Then reduce heat to low, cover and cook for 10-12 minutes. Then crush the peach pieces using a muddler or the back of a spoon.
  3. Add in the mint leaves and mix well. Cover and cook for 2 minutes on low heat.
  4. Remove from heat and let it cool slightly.
  5. Strain the syrup through a mesh-sieve. Press down the mixture using the back of a spoon to extract maximum syrup.
  6. Add in the lemon juice and combine well. Allow to cool completely and then refrigerate until chilled.

Serving Suggestions:

  1. Divide the chilled syrup among 4-5 large serving glasses, add in the ice cubes.
  2. Add few lemon wedges and peach slices on the glass, if desired.
  3. Slowly pour the chilled water or club soda into the glasses till it almost reaches the brim.
  4. Garnish with peach slices, lemon wedges and mint leaves, if desired.
  5. Serve immediately.

Notes:

  • Adjust the quantity of lemon juice according to the tanginess. I used ¾ cup lemon juice.
  • Adjust the quantity of sugar according to your taste. I used 1 ¼ cup sugar.
