Ingredients
  • Medium sized Potato - 2 Nos, cooked and mashed
  • Chopped Onion - 1 cup
  • Chopped Tomato - ¼ cup
  • Finely Chopped garlic - 1 Tablespoon
  • Finely Chopped Ginger - ½ Teaspoon
  • Green Chillies - 1-2 Nos, finely chopped
  • Curry leaves - 1 sprig
  • Chopped Coriander Leaves - 1-2 Tablespoon
  • Turmeric powder - ¼ Teaspoon
  • Kashmiri chilli powder - ½ Teaspoon
  • Crushed Fennel seeds - ⅛ Teaspoon
  • Mustard seeds - ¼ Teaspoon
  • Coconut oil - 2 Tablespoon
  • Water as required
  • Salt to taste
Directions
  1. Heat oil in a pan, splutter mustard seeds; Add chopped onion, green chillies, curry leaves and sauté till the onions are translucent.
  2. Then add the chopped ginger and garlic and sauté till the raw smell disappears.
  3. Add chopped tomato and sauté till mashed well. Then add the turmeric powder, chilli powder, crushed fennel seeds; Mix well and fry for few seconds.
  4. Now add the mashed potatoes, chopped coriander leaves, water, salt and mix well; Cook and stir till the masala becomes thick. (Note : Add water little by little till you get the required consistency.)
  5. Serve hot with poori :)
