   Happy Diwali   

Ingredients:
  • Chicken - 1 Kg, cut into medium pieces
  • Onion, medium sized - 4 Nos, thinly sliced
  • Tomato, medium sized - 2 Nos, sliced
  • Green chillies - 2 Nos, sliced
  • Chopped Ginger - 3 Tablespoon
  • Chopped Garlic - 3 Tablespoon
  • Mustard seeds - ½ Tablespoon
  • Kashmiri chili powder - 1 ½ Tablespoon
  • Coriander Powder - 3 ½ Tablespoon
  • Turmeric Powder - ½ Tablespoon
  • Garam masala - ¾ Tablespoon
  • Curry leaves - 2 sprig
  • Chopped coriander leaves - 3 Tablespoon
  • Coconut oil to shallow fry the chicken
  • Water as required
  • Salt to taste

For Marination:

  • Turmeric Powder - ½ Teaspoon
  • Kashmiri chilli powder - ½ Tablespoon
  • Yogurt or curd - 2-3 Tablespoon
  • Lemon juice - 1 Tablespoon
  • Salt - ½ Tablespoon
Instructions:
  1. Clean and wash the chicken pieces. Drain the water completely.
  2. Marinate the chicken pieces with the items listed in "For Marination" and keep it for about 15 minutes.
  3. Heat coconut oil in a pan, and shallow fry the marinated chicken pieces. Transfer to kitchen tissue paper and set aside.
  4. Splutter mustard seeds in the same pan, then add the sliced onion and saute until translucent.
  5. Add in the chopped ginger, garlic, green chilies, curry leaves and saute till the raw smell disappears.
  6. Add in the chopped tomato and saute until the tomato is mashed well.
  7. Then add in the turmeric powder, coriander powder, chilly powder, garam masala and saute for for 2-3 minutes or until the raw smell disappears on low heat.
  8. Now add in the shallow fried chicken pieces and mix well.
  9. Add in the required amount of water and salt. Mix well and cook for about 5 minutes on high heat.
  10. Then lower the heat, cover and cook until the gravy is thick on low heat.
  11. Add in the chopped coriander leaves and mix well. Cover and cook for another 1-2 minutes.
  12. Remove from heat and serve warm.
