Ingredients
  • Corainder seeds - 2 Teaspoon
  • Fennel seeds - 1 Tablespoon
  • Cumin seeds - 1 Teaspoon
  • Fenugreek seeds - ½ Teaspoon
  • Peppercorns - ½ Teaspoon
  • Dry red chilies - 3 Nos
  • Raw Rice - 1 Tablespoon
  • Cinnamon Stick - 3 inch piece
  • Cardamom - 6 Nos
  • Cloves - 3 Nos
  • Curry Leaves - 2 sprig
Directions
  1. Heat a pan, and dry roast all the ingredients individually until fragrant and turns light brown over low-medium heat. Do not burn.
  2. Let it cool, then grind together and make a smooth powder.
  3. Store it in an airtight container and use as needed.

Yield: Makes about ½ cup curry powder.
