Ingredients
  • Ripe Banana, mashed - 1 ½ cup
  • Lemon Juice - 2 Teaspoon
  • Unsalted Butter - ¾ cup, soften
  • Sugar - 2 ¼ cup
  • All-purpose flour - 3 cups
  • Baking soda - 1 ½ Teaspoon
  • Salt - ¼ Teaspoon
  • Eggs - 3 Nos
  • Vanilla extract - 2 Teaspoon
  • Buttermilk - 1 ½ cups
Directions
  1. Preheat oven to 275°F.
  2. Prepare a 9 x 13 pan and line it with parchment paper.
  3. In a small bowl, add in the mashed banana and lemon juice; Combine well and set aside.
  4. In a bowl, mix together the all-purpose flour, baking soda, salt and set aside.
  5. In a large mixing bowl, add in the butter, sugar and beat until combine well.
  6. Add in the eggs, one at a time and beat until soft and fluffy after each addition. Add in the vanilla essence and mix well.
  7. Add in the flour and buttermilk as batches. Beat until light and fluffy. Stir in banana mixture.
  8. Pour the batter into the prepared pan and bake for 60-80 minutes or until a wooden skewer inserted in centre comes out clean.
  9. Remove from oven and place directly into the freezer for 45 minutes and serve after.
