  • Bread Slices - 10-12 slices
  • Chicken breast - 400-450 Gms
  • Black Pepper powder - ½ Teaspoon
  • Vegetable Oil to fry the chicken
  • Butter to toast the bread slices
  • Salt to taste

For Chicken Salad:

  • Mayonnaise - 1 - 1 ½ cup, adjust
  • Carrots, grated - ½ cup, adjust
  • Spring Onion, finely chopped - 2 Tablespoon
  • Coriander leaves, finely chopped - 1 Tablespoon
  • Black Pepper powder - ½ - 1 Teaspoon, adjust
  • Salt to taste
  1. Cut the chicken breast to strips. Clean and wash the chicken pieces. Drain the water completely.
  2. Pat dry the chicken pieces using a kitchen paper towel.
  3. Season the chicken pieces with black pepper powder, salt and set aside for 10 minutes.
  4. Heat 2-3 tablespoons of oil in a pan.
  5. Add in the seasoned chicken pieces and fry until some golden spots appears on both sides of the chicken pieces on low-medium heat. Don't over-fry the chicken.
  6. Remove the chicken pieces from oil, and chop them to very small pieces. Set aside.

Chicken Salad Preparation and Assembling:

  1. In a bowl, add in the chopped chicken, grated carrots, chopped spring onion, chopped coriander leaves, mayonnaise, black pepper, enough salt and combine well. Set aside.
  2. Butter the bread slices, toast them and set aside.
  3. Spread 1-2 tablespoons of prepared chicken salad over one slice of toasted bread.
  4. Cover with another slice and gently press down.
  5. Then diagonally cut the sandwiches into triangles and serve immediately.

Yield: Makes about 5-6 sandwiches.
