Ingredients
  • Thinly sliced Kovakka, Ivy Gourd - 5 cup
  • Onion, thinly sliced - 1 ½ cup
  • Green chillies - 2-3 Nos, slit
  • Coconut slices, bite sized - ¼ cup
  • Curry leaves - 1-2 sprig
  • Chili powder - 1 - 1 ½ Teaspoon, adjust according to your taste
  • Turmeric powder - ½ Teaspoon
  • Coconut oil - 3-4 Tablespoon
  • Salt to taste
Directions
  1. In a large bowl, add in the sliced ivy gourd, onion, green chillies, curry leaves, turmeric powder, chilli powder, salt and mix well.
  2. Heat 2 tablespoon of coconut oil in a pan, add in the coconut pieces and try until slightly golden on medium heat.
  3. Then add in the ivy gourd mixture prepared in step #1 and mix well.
  4. Cover and cook until the ivy gourd pieces are ¾ done. Stirring 3-4 times in between.
  5. Then remove the lid, sprinkle 1-2 tablespoons of coconut oil, mix well and fry for about 10-15 minutes on low-medium heat. Adjust salt. Stir periodically.
  6. Serve hot with rice.
