Peppermint White Chocolate Cookies

Ingredients
  • All purpose flour - ¾ cup
  • Baking soda - ¼ Teaspoon
  • Cream of tarter - ½ Teaspoon
  • Salt - ⅛ Teaspoon
  • Butter, softened - ¼ cup
  • Granulated sugar - 6 Tablespoon
  • Egg white - 1 large
  • Peppermint extract - ¼ Teaspoon
  • Crushed hard peppermint candies or canes - ⅛ cup
  • White chocolate chips - ⅛ cup

For Sugar-Peppermint mix:

  • Hard peppermint candies or canes, crushed - ⅛ cup
  • Powdered sugar - ⅛ cup
Directions
  1. Preheat oven to 350°F.
  2. Mix together the ingredients mentioned in 'For Sugar-Peppermint mix', set aside.
  3. In a bowl, combine together the flour, baking soda, cream of tartar and salt. Set aside.
  4. Add sugar and butter in a mixing bowl. Beat until creamy for about 2-3 minutes.
  5. Add in the peppermint extract and egg white. Beat until creamy for about 2-3 minutes.
  6. Now add in the flour mixture and combine well.
  7. Fold in the crushed peppermint and white chocolate chips.
  8. Divide the dough into 12 equal sized balls, roll each ball into the prepared 'Sugar-Peppermint' mixture.
  9. Arrange the dough balls on a baking sheet lined with parchment paper.
  10. Bake for about 10-12 minutes. Then remove from oven and cool on baking sheet for 5 minutes.
  11. Transfer to wire-rack and cool completely. Enjoy :)

Yield: Makes about 12 medium sized cookies.
