Ingredients

For cooking rice:

  • Long grain Basmathi rice - 2 cups
  • Lime juice - 1 Tablespoon
  • Ghee - 1 Teaspoon
  • Salt to taste

Vegetables used:

  • Carrots, chopped - ¼ cup
  • Green Beans, diagonally chopped - ¼ cup
  • Bell pepper, chopped - ¼ cup
  • Cabbage, finely sliced - ¼ cup
  • Fresh or frozen green peas - ¼ cup
  • Sweet baby corns - ¼ cup, optional
  • Spring onion whites - 2 Tablespoon

For Fried rice:

  • Finely chopped Garlic - 1 Tablespoon
  • Dark Soy sauce - ¾ - 1 Tablespoon
  • Pepper powder - ¾ - 1 ¼ Teaspoon, adjust to your taste
  • Sugar - 1 Teaspoon
  • Vegetable Oil - 2 ½ Tablespoon
  • Salt to taste

For Garnishing:

  • Spring onion greens - 2 Tablespoon
Directions
  1. Wash rice thoroughly and soak for 15 minutes. Drain the water completely and set aside.
  2. Boil enough water to cook the rice in a big pot. Add in lime juice, salt and ghee.
  3. Once it starts boiling, add in the soaked rice and cook until the rice is 85%-90% cooked. Do not over cook.
  4. Drain off the rice to a colander and allow to cool completely.
  5. Heat oil in a deep wide pan, add in the chopped garlic and saute for one minute.
  6. Add in the chopped beans, carrots, sliced cabbage and saute for 1 minute on medium heat.
  7. Then add in the green peas, sweet corn and saute for 2 minutes on medium heat.
  8. Add in the chopped bell peppers and mix well. Then add in the sugar and saute for another 1 minute.
  9. Now add in the dark soy sauce and mix well.
  10. Then add in the cooked rice, pepper powder, salt and combine well. Fry for 2 minutes on high heat by stirring continuously.
  11. Remove from heat and garnish with chopped spring onion green parts.
  12. Serve warm with Gobi manchurian or Chilli fish or Chilli chicken on side.
