   Happy Diwali   

Ingredients:
  • All-Purpose Flour, Maida – 1 ¾ cup
  • Semolina – ¼ cup
  • Yogurt – ½ cup
  • Baking Powder – 1 ½ Teaspoon
  • Sugar – 2 Teaspoon
  • Salt to taste, approx: ½ Teaspoon
  • Vegetable Oil – 2 Tablespoon
  • Warm Water to knead, approx: 3-4 Tablespoon
  • Vegetable Oil, for frying
Instructions:

Bhatura Dough Making:

  1. Take the flour, semolina, baking powder, oil, sugar and salt in a mixing bowl, and combine well.
  2. Then add in the yogurt and mix well.
  3. Add in the warm water little by little and knead until the dough is smooth, for about 10 minutes using your hands.
  4. Spread little oil on top of the dough and cover it with a damp cloth.
  5. Set aside in a warm place for 2-3 hours.
  6. Then divide the dough into 6-8 equal portions and make into balls.
  7. Roll out each portion into round or oval shape in medium thickness.

Frying Bhatura:

  1. Heat oil in a heavy bottomed pan. The oil should be moderately hot. NOTE: Drop a piece of dough into the hot oil, it should puff up quickly. Maintain medium to medium-high heat while frying.
  2. Drop a rolled bhatura into the hot oil carefully and gently press with a slotted spoon, until it starts to puff.
  3. Once it starts to puff, gently press and rotate the bhatura till it puff completely.
  4. Deep fry till both sides are slightly golden brown in color. Splashing hot oil over the bhatura several times helps to maintain the shape and crispiness.
  5. Then transfer the bhatura on to the kitchen tissue paper to remove the excess oil.
  6. Continue to fry each bhatura this way.
  7. Serve hot with Chole masala.
