Ingredients
  • Basmathi Rice - 1 cup (for 4 cups of cooked rice, approx:)
  • Grated Coconut - 1 - 1 ½ cup, adjust
  • Green chillies - 2 Nos, chopped
  • Cashew Nuts - 10-15 Nos
  • Black gram, Urad Dal - 1 Tablespoon
  • Curry leaves - 2 sprigs
  • Mustard seeds - ½ Teaspoon
  • Coconut Oil - 2 Tablespoon
  • Salt to taste
  • Water as required
Directions

Cooking Rice:

  1. Wash and soak the rice for 30 minutes. Then drain the water completely and set the rice aside.
  2. Fill a medium saucepan with enough water, add enough salt, and bring to a boil. Once boiled, add in the soaked rice and cook till the rice is done. Make sure the rice is grainy and not mushy.
  3. When the rice is cooked, drain the water completely and set the rice aside. Let it cool completely.

Coconut Rice Preparation:

  1. Heat oil in a big pan and splutter mustard seeds.
  2. Add in black gram, cashew-nuts and fry until light golden in color.
  3. Add in the chopped green chillies, curry leaves and fry for 1-2 minutes on medium heat.
  4. Then add in the grated coconut and fry till the coconut turns light golden in color.
  5. Now add in the rice as batches and mix well after each addition. Adjust salt.
  6. Serve hot with veg or non-veg curries.
